An update (upgrade) is a term that describes adding new features and hardware in the engine or other software that improves its performance.
A software update provides bug fixes for features that aren’t working quite right, minor software enhancements and sometimes include new options or programs to support other hardware or newly created features.
Benefits of software upgrade:

Performance increase which makes the overall program run faster and more smoothly.

Capacity increase.

It may be necessary to upgrade the computer to meet a program or engine system requirements.
Please notice that there are different cases when template that you are using is not compatible with updated version of the engine. You can freeely check it on the Details Page of the theme.
For example: the following PrestaShop theme is compatible with – 1.5.x engine versions, that means all releases or 1.5.engine type. So, in such case all newest versions of engine will be not suitable for this certain theme:
